Wrap it Up! Pick and Mix Veggie Wrap with Grilled Halloumi and Tzatziki

Halloumi cheese is one of those yummy ingredients vegetarians adore but meat-eaters tend to shy away from. I was talking to a couple of friends the other day and one of them was talking about food (something foodies like to do… a lot) and how he was thinking of grilling himself a nice piece of steak and serve it with a rocket and sundried tomato salad and drizzle everything with balsamic vinegar. When I suggested he should try grilling halloumi instead of a bloody steak, he frowned. He said: “Hallou-what?? Grilled cheese instead of steak?? Nah, you’re insane!”

My friend doesn’t know what he is talking about. Cuz halloumi is the shizz.

So I hereby invite all you halloumi nitwits into my kitchen to enjoy a brilliant plate of grilled halloumi. I promise you won’t be disappointed!

Last weekend I made this incredibly delicious halloumi and tzatziki wrap and even my father, who normally is not a great fan of meatless wraps, absolutely loved it ànd the halloumi!

I call this a “pick and mix” veggie wrap, because I took the time to prepare all different kinds of salads and accompaniments to stuff your wrap with: apart from the grilled halloumi and homemade tzatziki, there were also griddled courgette slices, a Moroccan cumin and coriander carrots salad, thinly sliced marinated fennel, rocket and last but not least chicory with a mustard and sour cream vinaigrette.

Sounds delicious, doesn’t it?

That’s because it was!

Ingredients (serves 4)

For the tzatziki:

  • 200gr Greek yoghurt
  • 1 clove of garlic
  • ½ cucumber
  • 2 tbsp fresh mint
  • 2 tbsp fresh coriander
  • 2 tbsp fresh chives
  • 1 tsp ground cumin

For the Moroccan carrot salad

  • 4 carrots, grated
  • 2 spring onions, finely chopped
  • 4 tbsp fresh coriander
  • 2 tbsp sesame seeds
  • 1 tbsp cumin seeds
  • Lemon juice
  • Olive oil

For the marinated fennel:

  • 1 fennel, thinly sliced
  • Olive oil
  • Tarragon vinegar

For the chicory salad:

  • 3 chicories, thinly sliced
  • 1 tbsp grain mustard
  • 2 tbsp sour cream

To Finish:

  • 400gr halloumi, cut into 0,5cm slices
  • 1 courgette, cut into slices
  • Rocket leaves
  • Whole wheat wraps

Method:

  1. Make the tzatziki: Grate the cucumber and press the cucumber with the back of a spoon to get the water out. (This will make sure your tzatziki is not watery). Put the cucumber in a bowl together with the other ingredients and season well with salt and pepper.
  2. Make the carrot salad. Put all the ingredients together in a bowl and sprinkle on some lemon juice and 2 tbsp of olive oil
  3. Make the marinated fennel by tossing the super thin fennel slices in the 2 tbsp of olive oil and 2 tbsp of tarragon vinegar. Season with salt and pepper.
  4. Make the chicory salad by mixing everything together. (It is just too easy!)
  5. In a hot griddle pan, grill the courgette slices for a couple of minutes on each side. Put them in an ovenproof dish and put in the oven to keep them warm.
  6. In that same pan, grill the halloumi slices until crunchy on the outside but still deliciously gooey in the middle.
  7. Pick and Mix! Take your wrap (heat it in the microwave) and put everything you fancy on it!
